Ingredients

1 lb
lean ground beef
1 can(s)
15 oz pinto beans (drained)
1 can(s)
10 oz enchilada sauce
1 c
grated cheddar cheese
1-1/2 small
finely chopped onion
1 c
sour cream
1 can(s)
11 oz corn with red & green peppers
2 c
crushed corn chips
1 can(s)
8 oz tomato sauce

Directions Step-By-Step

Saute onion and set aside. Brown hamburger and drain. To hamburger add onion, enchilada sauce, tomato sauce, 1 cup of grated cheese, 1 cup of corn chips, corn and mix together and simmer for 10 min.

Pour hamburger mixture into a large casserole dish; bake covered at 375 degrees for 30 min.

Take out of oven and spread sour cream over the top and sprinkle with remaining grated cheese and remaining corn chips. Put back in oven uncovered for another 5 minutes.
