Ingredients
| 1 lb | ground beef |
| 2 small | or 1 large poblano pepper |
| 1 Tbsp | garlic, minced |
| 1 pkg | taco seasoning |
| 1 lb | sharp cheddar cheese - grated |
| 10-12 | corn tortillas |
| 1 medium | onion |
| 14 oz | enchilada sauce - (your favorite) |

Directions
First you want to put your poblano pepper on your grill and let the outside get charred. Then put it into a glass or metal bowl and cover it with plastic wrap immediately after you take it off the grill - This allows it to sweat and makes the skin come off much easier. While it is sweating you can move on to the next step.Next, brown your ground beef with a chopped onion. If you have alot of grease left then you will want to drain it off. Add taco seasoning.Peel the blackened skins off of the poblanos (don't worry if you miss some, it won't hurt anything,) discard the seeds and the stem, and chop it up.. but not too small. Put them into the skillet with your beef mixture. Cook this for just a couple of minutes on a low heat. The peppers are already done - you just want to marry the poblano pepper flavor into the meat.Take a small skillet and put a little extra virgin olive oil or vegetable oil or whatever you have on hand into the skillet. (Just enough to coat the bottom of the skillet will do.)On a low heat put each tortilla into the skillet for a few seconds. You just want to soften them - not fry them. Remove from the skillet and put a tablespoon of the meat mixture into the center of the tortilla. Sprinkle a little bit of the grated cheese into the center with the meat mixture, and roll the tortilla up and put into a 9x13 pan seam side down. Continue this until the pan is full.Pour the can of enchilada sauce over the poblanadas and then sprinkle the remaining cheese over the poblanadas. Put into the oven and cook at 350 for about 15-20 minutes or just until the cheese is melted. Top with shredded lettuce, chopped tomatoes, sour cream if you like.

Thank you Rhonda, Old Elpaso, I believe is the brand I used for this one. But there are usually some in the Mexican aisle at Wal-Mart and where they have the adobo sauce and Masa they have some authentic enchilada sauce there and you might give those a try and see if you like those better. I usually try those products out when I have a new recipe I wanta try and alot of the time I like them better.

Thank you so much Cindy...I "think" I tried Old ElPaso...being a Texas gal surely I have...but will give it another shot. I love their other things. I have dumped many brands right down the sink!! lol (where is Small Town?? My people are from Antlers. :) You have a great day (evening now) too!! Thanks again!!

Yep, I know just where Antlers is; been thru there on some occasions! Our small Town is Kansas. Everyone knows everyone else here! lol- Hardly ever meet a stranger. Bein' from Texas you might like somethin' a little spicier??? We like spicy food! Yummm! U might try a little mix up on that sauce - Like puttin' some adobo sauce in with it - Brings on a whole different taste! I do that sometimes especially with spaghetti sauce when I don't think it tastes quite right, I throw in a few other ingredients to make it taste better. I like making my own but sometimes I'm in a hurry and have to use the jarred stuff. Give that a try next time and see what ya think.

Well SISTER!!! I am in Siloam Springs right now!!! lol No wonder you put Small Town!! Little Kansas surely is small. I'm from Tyler but moved here with my husband a few years ago. So even on Just a Pinch ya meet no strangers! =) That's fun!! Great ideas on the sauce will play with it some. We cook every Wed. night for church and I want to try these...would be good for a chilly night. HOWEVER (lol) I don't need a chilly night. Bring on the spice even at a good ol' summer Terlingua chili cook off. lol Thanks for your ideas...great!

Goodness! That's tooo funny! We're only about 20 minutes from each other and didn't even know it! Guess it's a very small world after all! lol. How'd u end up in Siloam from Tyler??? lol. I go there on the weekends for groceries but man, I'm hatin' that construction and traffic! -- Yep! Bring on those spices! I love 'em! Right now I'm playin' around with some jalapeno's! I've got 1 for a cheddar stuffed jalapeno I tried when we lived in Florida and I'm always asked to make it - it's definetly not for the mild tongued! And I think it's bout time to make a few of those as well!(= Wished we had some kind of cook off around here! I bet that would be FUN!

Way too funny! My late husband was a truck driver and we moved here...then I lost him in an accident. Some of my family followed us here so I stayed and ended up re-marrying, my preacher of all people. ha We have a little country church in Maysville...so no doubt we know some of the same people. =) How'd YOU get here from FL???? lol Your peppers sound awesome!! Lordy I love to cook...my 'thinking time.' Sometimes I get finished and think how did I do that my mind was so 'gone.' lol And when I make something up and hubby loves it, well forget it, I don't know what I did, I was THINKING!!! Nuts, I know. lol Ohhhhh a chili cook off sounds so good...and like home. HAPPY COOKIN' to you to Neighbor!! (and the construction just got worse I hate to tell you!!)
