bonelss beef, top sirloin , or top round, cut into 4 servings, pounded very thin with a meat mallet.
( 1/2 stick ) unsalted butter
soft unsalted butter
finley chooped parsley ( fresh )
finley chopped tarragon or 2/3 teaspoons dried
finley chopped chives
Hurb Butter -- Combine all ingredients, blending well with a fork. Chill , when firm ehough to handle, reshape it into a stick or round ,wrip in wax papper and refrigerate for one hour before using.
Sprinkle each stake lightly with salt and pepper.
In a large frying pan heat 1 tablespoon butter and 1 tablespoon oil for each steak. Add the steaks and over high heat cook quickly, about 2 minutes, turning once.
Serve very hot, immediately, with a square/round of the herb butter melting on each steak.
