1Heat Crockpot on high, add in stew meat, 4 cups of water and all seasonings, including Beef Broth, gravy mixes, and Au jus mix. Bring to a boil, let boil for about 10 minutes, then turn down to low heat and add in onions. Let simmer for about 2 hours allowing meat to tenderize.
2After meat has cooked through and simmered for 2 hours add in diced potatoes, baby carrots (or chopped or sliced carrots). Make sure all ingredients are covered in sauce. If you need to add some extra water, be sure to taste it to see if you need to add more seasonings to compensate for the added water. I usually buy and extra can of beef broth and Au jus sauce mix just in case.
3Let simmer on low heat until potatoes are tender, usually about 2-3 hours simmering, stirring occasionally to prevent sticking or burning. If you start this meal the night before you are going to serve it, you can let it cool and store in the refrigerator overnight. Take out of refrigerator and heat on medium to high, stirring occasionally to prevent burning, for about an hour before your dinner or supper time.
4**Note** - I cook the meat, beef broth, gravy mixes, au jus mix, seasonings, chopped onions and water in my crockpot on low heat for about 2 hours then put it on warm and let it slow simmer all night long, then the next day I cut up the potatoes and carrots and add them in and let them cook on medium heat for a couple of hours and then it is ready for supper.**
