Hearty Vegetable Beef Soup

I made this after making my 'Tangy Crock Pot Roast' recipe (link is in the directions.) I had made that with 2 London broil roasts in the crock pot, the 2nd one being used for this soup. This soup had a LOT of meat in it, so you can easily cut that 2nd roast in half and freeze the other half with broth for later...

This recipe is very forgiving. You can vary the veggies & seasonings you use to suit your taste.

1/2 or 1
roast & broth from my 'tangy crock pot roast' recipe.
4-6 c
1 large
bag of frozen mixed veggies
1 large
can seasoned stewed tomatoes
egg noodles, uncooked
beef boullion


1Put meat & broth from <a href="Tangy Crock Pot Roast">Tangy Crock Pot Roast</a> in a crock pot. If you like a lot of meat, use the whole roast; if you like less meat, use only 1/2 and freeze the other 1/2 with broth for another batch of soup.
2Add water, veggies, stewed tomatoes & beef boullion.
3Cook on LOW for 6 hours.
4Using two forks, separate meat into chunks.
5Add egg noodles and continue to cook for another 20 mins.
6Stir soup & serve with hearty crusty bread.
