Ingredients

CORNED BEEF
1 can(s) corned beef
1 can(s) small tomato sauce
2 can(s) water
1 Tbsp sofrito
1 Tbsp recaito
1/2 tsp minced garlic
1 pkg sazon
2 or 3 dash(es) adobo powder
WHITE RICE
3 1/2 c long grain rice, uncooked
1/2 tsp salt
2 Tbsp vegetable or canola oil
water to cover about an inch over the rice

This is a great recipe that I learned from my mother in law. I changed it to make it more my recipe and my kids love it. It is a quick meal but also a healthy meal.

 

Directions

Rice- Dont wash your rice. Place 3 1/2 cups of rice in a big pot. Pour water over rice approximately 1 inch over the rice. Rice should cover the top of your hand. Put your salt and oil and bring rice to boil constantly stirring. When the water evaporates, turn the rice down to low, cover the top of the pot with foil and the top. This will help the rice cook evenly. Stir every 5 minutes until soft.

Put Corned beef in pot and break down with a fork the best you can. Add the sauce and water. Add sofrito, reciato, garlic, sazon and adobo.(Optional: 1 small potato cubes)

Cook on low heat. Stir about every 5 minutes.

Put your white rice on a plate and place your corned beef over it.
