Ingredients For chili-cheese stuffed zucchini boats

  • 1 lb
    lean ground beef
  • 1 can
    (8 oz) tomato sauce
  • 1 can
    (10 oz) diced tomatoes with mild chilies
  • 1 can
    red kidney beans, drained and rinsed
  • 1 1/2 Tbsp
    chili powder
  • 1 tsp
    onion powder
  • 1 tsp
    garlic powder
  • 1/2 tsp
    ground cumin
  • 6 md
    zucchini
  • 1 c
    shredded chedder cheese
  • crushed tortilla chips for topping, if desired.

How To Make chili-cheese stuffed zucchini boats

    Preheat oven to 350F. In a medium-size skillet over medium heat, brown ground beef, and drain. Add tomato sauce, tomatoes with their juice, beans and spices. Stir well, and let mixture simmer 5-7 minutes to let flavors meld.

    Meanwhile, slice zucchini lengthwise, and scoop out the center using a teaspoon. Place zucchini boats on a baking sheet, and carefully spoon in the chili mixture. Top with cheese, and bake for 20 minutes.

    Before serving, top with crushed tortilla chips if desired.
