This slow cooker recipe sounds so delicious and it's made with just a few ingredients. So simple! I found this at bhg.com and changed a couple of things to suit my needs.

Ingredients

1 to 1-1/2 lb
stew beef
salt and black pepper
10 clove
garlic
8 oz
fresh baby carrots
1 lb
roma tomatoes, chopped
1 can(s)
(6 oz.) tomato paste with basil, garlic, and oregano
1/2 c
water

Directions Step-By-Step

Place beef in 4-qt. slow cooker. Sprinkle with salt and pepper.

Smash garlic cloves with the flat side of a chef's knife. Separate and discard garlic skins. Place smashed garlic on beef. Add carrots and tomatoes to slow cooker.

In a medium bowl, whisk together tomato paste and water. Pour over meat and vegetables. Cover and cook on HIGH for 3 to 4 hours, or on LOW for 6 to 8 hours. Stir well before serving.

Serve with mashed potatoes.
