Asian Meatloaf with Peanut Butter Sauce

This is a very moist and tasty recipe- a change from the ordinary meatloaf- you are used too.. The peanut butter sauce is a wonderful addition to this recipe. I hope you try it soon!
I have also make this with apricot jam and glaze, real good-leave out the peanut butter if you use the jam.
Recipe tweaked by me, to my family's liking.

2 lb
ground turkey
1 c
plain bread crumbs
8 oz
can crushed pineapple, drained, reserve juice
1/2 c
each chopped onion and red or green bell peppers
1/4 c
diced celery
2 large
eggs, beaten
1/4 c
evaporated milk
1/4 c
soy sauce
1 Tbsp
finely minced fresh ginger
1/2 tsp
black pepper


1/2 c
orange juice and reserved pineapple juice to make 1/2 cup
1/2 c
soy sauce
1/2 c
creamy peanut butter or nutty
2 Tbsp
rice wine vinegar
2 Tbsp
heaping brown sugar
1/2 tsp
minced fresh ginger
1 tsp
minced garlic

Directions Step-By-Step

Preheat oven to 350^; Spray a loaf pan with non-stick vegetable spray. Set aside.
Combine all ingredients in a large bowl, mixing well to blend all the ingredients. Place in prepared loaf pan. Bake for about 45 minutes, remove from oven and spread about 1/4 of a cup of the sauce or a little more and bake for 10 minutes more. Serve remaining sauce at the table.
Bring all ingredients to a boil; stirring constantly,lower heat and cook until thickened. Pour 1/4 cup over meatloaf 10 minutes before end of loafs cooking time. Serve remainder at the table. So Good-Enjoy!
