Kathie's StoryI got this recipe from a friend who is lactose intolerant. I found it to be delicious and so easy to make that I prefer it to a regular pineapple smoothie. I hope you like it, too.

silk's plain soymilk or similar lactose free milk substitute
(8 ounces) unsweetened crushed pineapple
honey, sugar or equivalent sugar substitute
1Place all ingredients except ice cubes in a blender and process until smooth. Coconut should be chopped very fine. Add ice cubes a couple at a time and continue to process until ice is crushed and incorporated into the drink completely. Pour into chilled glasses and serve immediately.
