I couldn't wait for my mom's rice pudding to come out of the oven and have some warm and the same thing for her custard. Comfort food to the max. I experimented to combine both and I think I've done it! Rice Pudding with a layer of custard on top with a sweet crust of cinnamon. Enjoy!
Start oven 350 degrees. Put rice and raisins in 1.5 quart casserole. Beat eggs slightly. Add sugar, vanilla, salt. Set aside. Scald milk (5 mins. in microwave!) in quart container. Add egg mix to milk and mix completely. Pour over rice. You should see layer of liquid above rice and raisins. Sprinkle cinnamon on top. Place in hot water basin and place in heated oven and cook desired time. Remove when knife slides out clean. Serve warm or cool with whipped topping.
