Visions of Sugar Plums Pie

My mother-in-law cans her own vegitables and fruits. That is how I came to be in possesion of plum juice. She puts her homegrown plums in her juicer to make the plum juice. My father-in-law insisted that I needed to post this pie recipe when I made it the first time. I hope you enjoy it as much as we have.

Ingredients

1 c
plum juice
1 c
heavy whipping cream
1 c
sugar
2 pkg
cream cheese (approx 8 oz each) softened
1 box
coconut cream pudding (cook and serve)
1 box
vanilla pudding (cook and serve)
2-3
graham cracker pie crust
4 c
milk

Directions Step-By-Step

In medium saucepan, combine vanilla pudding mix, coconut cream pudding mix, and 4 cups milk. Prepare according to package directions. Be careful to stir constantly so pudding does not burn.

While pudding is cooling/setting, in large mixing bowl combine both packages cream cheese, sugar, heavy whipping cream and plum juice. Mix on medium-low until mixture blends together completely, then thickens to a whipped cream consistancy.

Spoon in pudding mixture into pie crusts until half filled. Fill in remaining half with plum mixture. Chill until set, this will usually take two to three hours (or overnight) before serving. This will make two to three pies.
