Sweet Potato Pecan Pie

Very good old Southern recipe. Got this from my Mom. I loved her pies. She didn't make cakes very often. A real easy & delicious pie.

Ingredients

2 c
cooked, mashed sweet potatoes
1/2 c
brown sugar
1/2 c
granulated sugar
1/4 tsp
salt
1/8 tsp
ground ginger
1/4 tsp
ground cinnamon
1/4 tsp
maple flavoring
4
eggs lightly beaten
1 c
chopped pecans
1
unbaked, 9 in. pie shell

Directions Step-By-Step

Preheat oven to 350. In a large mixing bowl thourghly combine mashed potatoes, sugars, salt, spices & flavorings.

Add eggs, beat vigorously until well combined. (You can beat with electric mixer) Stir in pecans. Pour mixture into pie shell.

Bake for 45 min at 350. Then reduce heat and bake for an additional 10 minutes at 325.

You can use Splenda Blends for baking. For the brown & granulated sugars. I have used them.
