Simple French Coconut Pie

Someone gave me this recipe more than 30 years ago and it is an all time favorite in our home.

This is one of the best coconut pies you will ever have and without a doubt the easiest to make.

Everything mixes in one bowl, pour into a pie pan and bake. The pie even makes it's own crust.

Ingredients

4
eggs
2 c
whole milk
1/4 c
butter, softened

sugar
1/2 c
self-rising flour
1 1/2 c
coconut, shredded
1 2/3 tsp
vanilla extract

Directions Step-By-Step

Preheat oven to 350 degrees

Grease and flour a 9" pie pan

In a large mixing bowl add all ingredients listed

Mix well, batter will have texture from butter and coconut.

Pour into prepared pie pan

Bake at 350 degrees for 45 minutes or until a knife inserted comes out clean.

Cool before serving.

    I wont have the chance to make this Ill be in the hospitol over a month then no cooking for six weeks, oh sad no kitchen its gonna kill me,
    But i cant wait to make this , i have not been very hungry,,,, but this i would eat, and i dont eat sweets awesome

    I have done this with bisquick it is just wonderful!

    Thanks for the hint Peggy, I will try that next time. Bisquick would be more convenient that buying self rising flour.

    My kids and I make this all the time. Although this has become known as Melissa's Pie at our house. She insists she cant cook a thing, but this recipe is so easy , no one can mess it up. Remember when you take it out of the oven, it will be puffed up, then fall, that's OK.Its is really good cold!
