this pie recipe it reminded of my favorite ice cream.

Ingredients

1 c
semi-sweet chocolate chips
1/3 c
whipped cream
1 Tbsp
light corn syrup
2 1/2 tsp
mint extract
1
chocolate pie crust (10 inch)
1 c
chocolate covered creamy mints
4 oz
cream cheese,softened
1 1/2 c
milk
2 Tbsp
chopped fresh mint leaves
2 pkg
instant vanilla pudding mixes
3
drops green food coloring
1
carton frozen whipped topping,thawed,divided

Step-By-Step

1In a saucepan,melt chocolate chips,whipped cream,corn syrup and mint extract over low heat;stir until smooth.Spoon into the crust.Sprinkle with chocolate covered creamy mints.
2In a mixing bowl,beat cream cheese until smooth.Gradually add milk and chopped mint leaves;mix well.Add pudding mixes and green food coloring;beat until smooth.Fold in 11/2 cups whipped topping.Spoon over chocolate covered creamy mints.Spread remaining whipped topping over the filling.
3Refrigerate for at least 3 hours before serving.
Garnish with chopped mint leaves.
