Ingredients

PIE CRUST
2 1/2 cups of rice krispies cereal
1/2 cup white karo syrup
1/2 cup peanut butter
ICE CREAM FILLING
1 1/2 quart (full 48 ounce carton) of kroger caramel delight ice cream or any ice cream of your choice.
1/4 cup peanut butter (you can omit if you wish)
optional ingredients: nuts, whipped cream, chopped maraschino cherries, etc.

Bonnie's Notes:

This is an delicious and easy dessert made from most things that you have in your pantry. We like the Kroger Caramel Delight ice cream with 64% less fat in this pie, but you can use whatever your family likes. Definitely company worthy. Enjoy!

 

Directions

MAKE THE CRUST FIRST

You will need Rice Krispie Cereal, peanut butter (crunchy or smooth) and white Karo syrup.

Mix the crust ingredients together in a large bowl and stir gently to combine.

Divide the crust mixture into two pie pans. Dampen your fingers with water, and pat the crust evenly over the bottom of the pie pan and up the sides. Place the two shells in the freezer for about 15 minutes.

MAKE THE FILLING

I use Kroger Caramel Delight ice cream. It is 64% less fat, and it is so delicious and creamy that you would never know it is lower in fat.

Using a large mixing bowl, add the peanut butter to the ice cream and fold it in. Work fast so the ice cream doesn't melt.

Spoon the ice cream into the chilled, prepared pie pans. Smooth the top and cover with Press and Seal wrap and place the pies in the freezer until firm, about an hour or two.

To serve, add a dollop of whipped cream if you wish. Enjoy!

Now this will be a keeper to make for my son in law #2, he will only eat pies, cookies and mud patties no cakes. Chocolate and p-nut butter are his delights so I am sure he will eat this carmel and p-nut butter pie.

Thanks, ladies, it is so easy, and you can change it any way you like. Chocolate is good, too, with a light cool whip topping and some chocolate shavings on top. You can't really do anything wrong! LOL!

I made a pie similar to this 40 years ago. Got the recipe off of a Rice Krispies box. It called for fresh peaches mixed in with vanilla ice cream. It was so good! I never thought about keeping a recipe back then but wish I would have. I have often wished I remembered how to make it. Thanks so much! Going to get some peaches and make this for dessert tonight:)

Yes, it is similar, but I think they made the crust with marshmallow creme and Rice Krispies. I make the treats that way, but never tried a pie crust. This one is more firm than the treat mixture (because of the Karo). When you cut the pie after it is frozen, it cuts clean. I hope you like it, Cheryl!
