Ingredients

1/2 c butter, room temperature
1/4 c shortening
3/4 c sugar
1/4 tsp salt
1 1/3 c flour
1 tsp cream of tartar
1/2 tsp baking soda
1 egg
8 oz pkg cream cheese, room temperature
1/2 c sugar
1 c juice drained from canned fruit
2 Tbsp cornstarch
any chunked fruit {pinapple bananas. strawberries peaches, etc}
1 can(s) fruit cocktail, canned

What a light, refreshing treat! This one is perfect for a morning bite or as an after dinner sweet. Try adding just a little bit of lemon juice to the cream cheese mixture for an added punch of flavor.

 

Directions

1
Combine butter, shortening and sugar
add egg, mix well
add dry ingedients
Spread in greased cookie sheet
Bake @ 400 deg. 8-10 min. and cool

Mix cream cheese w/1/2 cup sugar spread on cooled crust
Drain fruit, combine juice with cornstarch cook unitl thick, add fruit
Place on creamcheese and crust
Refrigerate 2 hrs before serving

I have the same recipe & everyone loves it. I usually use tropical fruit cocktail. It adds a little "zing" that's really delicious.

I have made this using an even easier method. I rolled out a package of refrigerated sugar cookie dough. I made it with blueberries and strawberries in the design of our flag for July 4th.

What size cookie sheet do you use,The photo shows it being in a pie tin,Would like to know because this looks awesome. Thank you and congrats on your blue ribbon!!! :)

This recipe is AWESOME! I've been making it for years & all summer long. I use a bagged sugar cookie mix, bake it on a disposable round pizza pan & I use crushed pineapple(drained) on top of the cream cheese. Then add all kinds of fruit. Great Recipe! recommend to everyone!
