I have just started making homemade pies and absolutely love them. I ran across this recipe and decided to tweek it a little. It is super easy and very delicious! You can use your own homemade pie crust and I did ad a little bit of cinnamon to the peach filling.
Preheat oven to 375 degrees. Remove pie crusts from package, stack crusts on top of one another and roll out on a lightly floured surface to a 17X12 inch rectangle. Fit crust into the ungreased 15X10X1 pan, pressing into the corners. Fold the extra pie crust even with the edges of the pan and crimp.
In a large bowl, mix brown sugar, cornstarch and lemon juice. Stir in the peaches to coat and spoon on top of the pie crust. Break cookie dough into crumbs and sprinkle evenly over the top of the peaches. Bake 50 to 60 minutes the crust is golden brown and the filling is bubbly. Cool on rack for 45 minutes, cut and serve.
