Easy summer tomato pie

This is a great way to use up those fresh tomatoes from the garden.

Ingredients

1 pkg
refrigerated pie crust, such as pillsbury
2 large
fresh tomatoes, sliced
1/2 tsp
dried basil
1/2 tsp
freeze-dried chives
1/2 tsp
pepper
1/2 c
light mayonnaise
1 c
reduced-fat, shredded sharp cheddar cheese

Step-By-Step

1Heat oven to 4550. Spray a 9" pie pan w/ cooking spray. Fit 1 pie crust into pan, and crimp edges.

2Prick bottom and sides of pie crust w/ a fork and bake 9 mins. Reduce heat to 350. In bowl whisk together basil, chives and pepper. Arrange tomato slices in pie crust evenly. Sprinkle w/ herbs.

3W/ a spoon, spread mayonnaise over tomatoes. Sprinkle w/ cheese. Bake, uncovered 20 mins or until cheese is melted and pie is hot.
