Ingredients

2 - 9 inch pie crusts
1/3 c rasberry jam
1/2 c rolled oats (oatmeal)
1 1/2 c brown sugar
pinch of salt
1/2 c semi sweet chocolate chips
2/3 c milk
2 Tbsp butter, melted

I was given this recipe many years ago, this was part of my therapy to learn how to cook again after I sustain a traumatic brain injury.

 

Directions

Preheat oven: 350 degrees.... Prepare your bottom crust in pan; spread jam on crust in pan. Set aside.

Mix together in bowl - dry oats, brown sugar, pinch of salt, & chocolate chips.

Fold in milk & melted butter; spread evenly over jam in pie pan.

Cover pie with top pie crust....

Bake for 25 minutes & serve with ice cream if desired.

I just wanted to say that I've been looking through some of your recipes (and printing them) and thank you for sharing them! It's so great that you can use cooking as therapy after an accident! And you seem to be doing great! Thanks again!

Thank you so much for your wonderful comment......I had a great team on my side back then to get me back to cooking, baking & the therapist even taught my husband & I a new craft (quilting). I am blessed they did not give up on me & kept plugging along, it was very hard on all involved with my rehabilitation, in all aspects (cooking, talking, memory, walking, driving etc.).

I am so thrilled I found this site because not only can I share my recipes I get to try other recipes out plus I can develop a long distance friendship with some awesome people...
