Cool Lime Cheesecake

- 2 large
- 8 oz cream cheese, room temperature
- 2/3 c
- sugar or splenda
- graham cracker pie crust
- 1 dash(es)
- green food coloring, opt
1zest the limes and juice them.
2with electric mixer, blend cream cheese with sugar in a large bowl until smooth
3blend in lime zest, and juice
4beat in eggs one at a time, blending well after each
5add a drop of the food coloring
6pour into crust and bake 30 minutes at 350 degrees.
7cool, slice and serve with sweetened sour cream or cool whip.
