- pastry for a 2 crust pie
- 1 1/3 c
- 1/3 c
- 1/2 tsp
- grated orange zest
- 1/8 tsp
- 4 c
- (1/2" pieces) rhubarb pink if you can get it
- 2 Tbsp
1Combine sugar, orange zest, and salt. Add to pink rhubarb.
2Place in pastry lined pie pan dot with butter.
3Adjust top crust and flute edges, cut vents.
4Bake in 425 degrees oven for 40-50 minutes or until juice begins to bubble through vents and crust is golden brown. Partially cool before serving.
5Note if rhubarb is not pink add a few drops of red food coloring to filling. The amount of sugar depends on the tartness of the rhubarb from 1 1/3 cups to 2 cup depending on how tart you like it.
6This pie can also be made with a lattice top.
