This recipe can be made as a cheesecake, or bars. I made bars tonight.

Ingredients

CRUST
1 1/2 c
graham cracker crumbs
6 Tbsp
butter, melted
1 1/2 Tbsp
sugar
1/2 c
chopped walnuts or pecans - i used pecans
FILLING
2 - 8 oz
cream cheese, softened
1 can(s)
sweetened condensed milk
1/4 c
lemon juice
3
eggs
1/2 c
chocolate chips or more if you like
8 - 10 oz
caramel topping
1/2 c
walnuts or pecans, chopped

Directions Step-By-Step

Preheat oven to 300 degree F.

Mix cracker crumbs, sugar, nuts and margarine. Press into 9-inch spring form or cake pan. Set aside.

Blend cream cheese until creamy. Mix in sweetened condensed milk and lemon juice; then add eggs and mix. Pour over crust.

Sprinkle the chocolate chips over the cream cheese layer and allow them to sink.

Bake for 50-55 minutes.

Remove and drizzle caramel topping over the top and sprinkle with chopped nuts. Bake for additional five minutes.

Remove, cool, and refrigerate.

I think the ice cream topping I saw last night was Smuckers...but no preserves...

Do your local stores carry Smuckers? Could be the pineapple isn't a popular flavor. Stores usually carry what sells the best. If you can't find it, I would definitely go with the ice cream topping--it will have some pineapple already in it.
