Cranberry Orange Bread (with chopped walnuts)

From an old Betty Crocker Book, been using this recipe for 30 years. In the book it is listed under quick breads. I use a little bit more orange rind. you can omit the walnuts.
I double the recipe and doubled makes 2 loafs.

Ingredients

2 c
all purpose flour
3/4 c
sugar
1 1/2 tsp
baking powder
1 tsp
salt
1/2 tsp
baking soda
1
egg beaten
1 tsp
grated orange peal ( i use navel, & use more than calls for)
3/4 c
orange juice, i use juice from the orange & add tropacana orange juice to make up the rest needed)
2 Tbsp
veggie. oil
1 c
chopped cranberries (i use a little bit more, like a heaping cup)
1/2 c
cup chopped walnuts (optional)

Directions Step-By-Step

350 oven, Grease loaf pan. ( I use Crisco) no need to flour the pan

In medium bowl
Mix together flour, sugar, baking powder, baking soda and salt

In medium bowl
Combine egg, grated orange peel,orange juice, and veggie oil.

Add step 3's ingredients to the dry ingredients, stirring just until moistened.

Fold in cranberries and walnuts.

Put batter in loaf pan 9x5x3 inch bake in 350 oven for about 60 minutes or until done.
Remove from pan; cool. Wrap; store overnight.

I double the batch and freeze 1 for the holidays
