I forgot all about this recipe , I got this recipe from my Grandma over 30+ years ago.

I use to make this all the time , Its very delicious ..course home made ice cream always is...

6 - 8 servings

Ingredients

3 Tbsp
quick cooking tapioca
2 c
scalded milk
1/2 c
sugar ; divided
1
egg yolk
1 1/2 tsp
vanilla
2
egg whites
1/4 tsp
salt
1 c
thick cream
1 c
toasted coconut

Directions Step-By-Step

In the top of a double broiler ; Stir together the tapioca and the scalded milk ; Cook for 15 minutes or so until it thickens , Make sure you stir it often. Add 1/4 cup of the sugar during the last few minutes of cooking.

Press mixture through a sieve and Beat in an egg yolk and the vanilla.

Whip egg whites gradually adding the other 1/4 cup of the sugar and the salt.

Fold in the into the tapioca mixture.

Whip the cream until thick and fold in to the mixture.

Fold in the coconut to the mixture.

Pour into two shallow trays or you could use one deep dish and freeze Quickly.
