I had a fruit drawer full of fresh peaches and kids that wanted something for dessert. So I improvised and this is what came out. I am happy to say it was a hit with all of the kids and they have asked that I make it again. Hope you enjoy. It is fast and easy!
1Melt margarine in a pan on medium heat. Add brown sugar, cinnamon,and vanilla. Stir continuously for 2 minutes.
2Add sliced peaches and stir to coat completely in the brown sugar mixture. Turn heat down to medium/low and cover. Let it cook for 10 minutes and turn the heat up to medium again.Continue cooking for 3 minutes, stirring constantly while the brown sugar caramelizes.
3Take off of heat and let sit for 2 minutes. Spoon into bowls. Top with crushed vanilla wafers and whipped cream. Best served while warm but tastes great at room temperature as well. Enjoy!
