Ingredients

6 ounces raspberries
8 ounces blue berries
16 ounces strawberries
2 tablespoons fresh lemon juice
2 tablespoons contreau
2 teaspoons honey
2 tablespoons chopped mint
top with light cool whip

Bonnie's Notes:

I love this salad! This is a delicious and light, low-fat fruit salad with a honey lemon dressing. Topped with low fat cool whip. Yum! Enjoy!

 

Directions

Wash the berries, remove the stems, slice the strawberries, leave raspberries and blueberries whole, drain well, and blot gently with paper towels.

Whisk together the fresh lemon juice, Cointreau, honey and the chopped mint. Pour over berries. Toss gently. Serve immediately with light cool whip. Enjoy!

You are welcome, Juliann! The Contreau is the secret. When I was creating this recipe, I thought, well, it is orange flavored, it has fruits, why not, and boy, was it good! LOL!

I will bet it is good. I must buy some Contreau, I have Gran Marnier, but I think Contreau would taste better. LOL

I am not much of a drinker, just now and then, but Contreau is so good in margaritas -- takes it to a whole new level. Give it a try!

Juliann: Also, no headache the next day with the Ultimate Margarita......let me rephrase that, I guess it would depend on how many you drink! LOL! Cheap alcohol triggers a migraine for me, so I only have one. And it has to be good liquor because there is nothing worse than a headache with bad liquor--Groan!

IN the Summertime, I eat berries by the flats. I hve a blueberry Farm less than a mile away, and They know I will buy Many flats. I eat them Plain, as I am on the Road for My living so much, I pack them in Zip-lock bags and Much on them thru out my day. Better than any thing else you could much on. So Thay have little time to find their way to a salad. I have no Liquor but maybe a small baileys, as I am not a drinker, so to make anything special like this I have to find the TINY bottles. Looking forward to trying this dressing for the fruits, this summer. No Bonnie, Your not keeping me busy, I have So Many irons in the fire I amaze myself at times with all I do.
