Pineapple Luau Style (Grilled)

1 large ripe pineapple
1/3 c butter or margarine
1/3 c honey
2 Tbsp lime juice
1/4 tsp ground ginger

When having a BBQ I like to include fruits and vegetables. This is a pineapple recipe that is great along side grilled chicken or brats. The sweetness is heavenly and the grilling subsides some of the strong acid the fruit yields

Remove leafy top of pineapple and reserve for garnish
Cut pineapple lengthwise into 8 wedges. Slash pineapple with sharp knife verticle slashes 1 inch apart down to but not thru skins
Heat butter in small saucepan on grill until melted. add honey, lime juice and ginger
brush cut surfaces of pineapple with butter mixture and place on grill. Grill 15 minutes, turning every 5 minutes and brushing with butter mixture.
place reserved top in center of serving platter and lay grilled wedges around for a nice presentation. ENJOY !

OMG....gaynet.....I make the same exact recipe....sometimes I change up the ginger for chipotle powder....other than that its the same....GREAT MINDS...HUH?

It is actually cold here today, and going to rain. Got a big BBQ coming up the 9th tho, and planning on serving this. I love pineapple, but the acid tears up my lips , mouth and stomache. If I fix it for the bbq, can share that way :)

By the way, Dr. Oz says to eat the core, has more benifits than the actual part most people eat. something about belly fat ?? heh

Oh say it isn't soooooo.....we don't have a Krogers near us " insert sad face here :-( " we had on when we lived in Sulphur Louisiana but not in Lafayette.
