Gooseberry Suprise Bars

Gooseberry's are only in season for a few weeks each year but the freeze well. I got the original recipe from a friend in the Republic of Panama about 27 years ago and Have done some tweeking for my families tastes. My son LOVES these bars.

Ingredients

CRUST:

2 c
all-purpose flour
1 c
brown sugar
1 c
butter, cold

TOPPING:

eggs
1 c
brown sugar, firmly packed
1 1/4 c
all purpose flour
1/2 tsp
baking powder
1/2 tsp
salt
2 c
gooseberries cooked ( i cook mine with 1 tbsp sugar per 1/2 cup berries and a little water for 10-15 minutes then hit with imersion blender till well blended.)

honey

Directions Step-By-Step

CRUST: Blend together butter flour and brown sugar with pastry blender until crumbly and well blended. Press into pan and bake at 350 degrees for 20 minutes.

TOPPING: Beat eggs and brown sugar until fluffy. Add baking powder and salt to flour; blend into egg mixture. Stir in gooseberries. Spread over baked crust. Bake for 20-25 minutes.

Cool on cooling rack and cut into bars.
