My son wanted something different to eat and I wanted to surprise him with something special. So off to the kitchen I went and just started to throw things together and the results were amazing! You can use probably any fresh fruit you would like with this. I preferred to use strawberries as that is my son's favorite and mine too. These came out with just a hint of sweetness, which in my book just a hint is just fine with me. You can adjust it to your liking of course. My son definitely wants these more often now! Try these for breakfast or even dessert!

I could just eat the filling for this stuffed French toast recipe by the spoonful. It has just the right amount of sweetness and the lemon juice is perfect to add a slight tartness. This is an impressive French toast recipe to serve at a special occasion or brunch. I used strawberries this time, but can't wait to try it with other fruit.

Ingredients For fruit stuffed french toast

  • 6 slice
    cinnamon swirl bread
  • 1 Tbsp
    oil of your choice, I used olive oil
  • EGG WASH
  • 3 lg
    eggs, lightly beaten
  • 1/2 tsp
    pure vanilla extract
  • 1 tsp
    cinnamon (I used fresh grated)
  • 1/2 tsp
    freshly grated nutmeg
  • 3 Tbsp
    cream
  • FILLING
  • 1-1/2 c
    fresh strawberries, sliced
  • 8 oz
    cream cheese
  • 1/2 stick
    butter
  • 1 tsp
    pure vanilla extract
  • 1/4 c
    powdered sugar
  • 1/2 c
    cream
  • 1 tsp
    fresh lemon juice

How To Make fruit stuffed french toast

    In a medium bowl, slice your strawberries and set aside.

    Mix your filling in a medium bowl. Mix the cream cheese, butter, and confectioners sugar. Add lemon juice and mix well. Add cream, vanilla, and mix well again. Fold in strawberries and set aside. (reserve some for topping on the side)

    In a shallow dish mix your egg wash. Add all ingredients for the wash, whisk well, and set aside.

    Heat your pan with oil on medium heat. Dip bread in egg wash both sides, and put in pan. Fry to a golden brown. Be sure to keep checking it so it does not burn.

    When finished cooking, take 1 slice put on the plate and place about a tablespoon of the filling in the middle of the bread. Place another slice on top of the filling like a sandwich.

    Here's the fun part... you can top these beauties with sifted confectioners sugar, more fresh fruit, whipped cream, nuts, a drizzle of organic pure maple syrup, etc. Get creative, the sky is the limit! Enjoy!
