Easy New England apple fritters

apple, peeled and diced
Heat 2-3" oil in lg deep skillet over medium heat. In bowl, whisk together flour, baking powder, 1/4 cup sugar and 1/4 tsp cinnamon.
In small bowl, toss together the apples and lemon juice. Add apple to batter. Stir well. Drop spoonfuls of batter into hot oil. Fry about 2-3 mins per side.
Drain on a paper towel. In small bowl, mix together remaining sugar and cinnamon. Roll each fritter in cinnamon mix.
