Another diabetic dessert recipe I came across in my book. Good for the holidays for those that cannot have all the sugar. Enjoy

Ingredients

3/4 c
fresh or frozen peaches, diced
1 c
splenda
3/4 c
plus 3/4 tablespoon whole wheat flour
3/4 c
warm water
1 c
old fashioned oats
1/4 c
smart balance margarine
1 tsp
baking soda
1 tsp
pure vanilla

Directions Step-By-Step

Prepare the filling:

Bring the peaches, 1/2 cup splenda, 3/4 tablespoon flour, and 3/4 cup water to a boil in a double boiler. Stir continuously until thickened.

Prepare the crumb base and topping:

Combine oats, margarine, 1/2 cup splenda, 3/4 cup flour, baking soda, and vanilla; halve the mixture. Place half in the bottom of a 9 inch square baking dish. Layer the thickened filling on top. Add the remaining crumb base to the top.

Bake 350ยบ for 30 minutes.
