Grated Sweet Potato pudding

I have memories of my mom cooking this pudding and how good it smelled when she opened the oven door to stir it.

Ingredients

4 cups peeled and grated raw sweet potatoes
1 cup sugar
1/2 cup brown sugar
3 eggs, beaten
1/2 teaspoon ground cinnamon
1 cup milk
1/2 cup orange juice
1/2 cup melted butter
1/2 teaspoon ground clove
1/2 cup chopped pecans

Step-By-Step

1First mix the milk and orange juice in a medium bowl to put the potatoes in as you grate them to keep them from turning dark.

2Mix all ingredients in a large bowl and pour into a buttered baking dish.

3Bake for 55 to 60 minutes in a 325 degree oven. Open oven door and stir occasionally during baking time.
