Summertime Mixed Fruit Cobbler

A few leftover blueberries, strawberries and a peach from other dishes I've made this past week was just the perfect amount of fruit for a cobbler.

I added a little orange zest to the batter and tossed some cubed cream cheese in with the fruit.
It was an amazing dessert!

Ingredients

4 c
fresh fruit (i used blueberries, strawberries and peaches)
2 Tbsp
sugar
1/2 c
butter
1 1/2 c
self-rising flour
1 c
sugar
1/2 c
brown sugar
pinch
salt
1 tsp
orange zest, (optional)
1 1/2 c
milk
1 tsp
vanilla extract
3 oz
cream cheese, cubed (optional)
cinnamon sugar

Directions Step-By-Step

Preheat oven to 350 degrees. Melt butter in a 9 x 13-inch pan as oven preheats being careful to not burn your butter. Once melted remove pan from oven.

Clean and cut up fruit, sprinkle with 2 tbsp sugar and gently toss; set aside.

In a medium mixing bowl, whisk together the flour, sugar, salt and orange zest. Add milk and vanilla; whisk until combined and no lumps.

Pour batter into pan with melted butter; top with fruit and cream cheese. Sprinkle cinnamon sugar on top.

Bake at 350 degrees for 40 to 45 minutes.
