BEST PECAN PIE

Friends and neighbors always love receiving this pie! This is my favorite pecan pie recipe because it is deliciously sweet and rich and it turns out great every time. Be sure to let all ingredients come to room temperature, and use the foil or pie shield, as directed.

Ingredients

pie crust shell, thawed uncooked
1 1/2 c
whole pecans
1 c
light (white) corn syrup, room temperature
1 c
dark brown sugar
1/3 tsp
salt
1/3 c
butter, melted
1 tsp
pure vanilla extract
3 large
eggs, room temperature

Directions Step-By-Step

Place oven rack in center position and preheat oven to 350 degrees F.

Place well thawed pie crust on a baking sheet and set aside.

Place pecans in a large microwave dish and microwave, at full power, for 1 minute; stir pecans and microwave, at full power, for 1 additional minute; remove from microwave and set aside.

Mix together syrup, brown sugar, salt, melted butter and vanilla until smooth.

Add eggs to batter and beat until thoroughly combined.

Pour into crust and sprinkle with pecans (NOTE: you may use the pecans whole, chopped or half and half as pictured).

Bake at 350 degrees F for 30 minutes; cover edge of crust with foil or pie shield, rotate pan and bake an additional 40 to 45 minutes, until knife or toothpick inserted in center comes out moist, but clean.

Allow to cool completely before serving (2 hours or more). You may refrigerate, after cooling on counter for 1 hour, to hasten cooling.
