Tasty Strawberry Gelatin Cake With Berries

This cake will remind you of the flavors of Strawberry short cake.I love this cake.It isn't high in fat,and I don't feel like I sabotaged a diet eating a piece.It is homemade unlike other Gelatin cakes. It is full of strawberries,and so delicious. I tweaked a low fat cake recipe I had,and added a few ingredients to make it my own.Great way to cut calories.
Each serving has approximately 200 calories,and 7 grams of fat. Enjoy!

Ingredients

egg whites
1/2 c
sugar

SEPARATE BOWL

2/3 c
butter
2 tsp
vanilla extract
1 c
sugar
1/2 tsp
salt

egg yolks
3 c
flour all purpose
2 tsp
baking powder
2/3 c
skim milk or 1 percent milk
2 1/2 c
frozen strawberries chopped in food processor
1 box
sugar free strawberry jello
1
tub of cool whip free topping,or powdered sugar for serving.

MAKE IT SPECIAL(OPTIONAL)

add sliced fresh strawberries to top of each slice of cake

Directions Step-By-Step

Preheat oven to 350 degree's. Spray a 9x13 inch pan with vegetable oil spray,and flour it.

In a medium size bowl beat the egg whites until stiff.
Add 1/2 cup of sugar,and beat until smooth.

In a large bowl beat softened butter,vanilla,salt,and 1 cup of sugar. Mix until smooth.

beat in the egg yolk and beat until combined.
Add the flour,milk baking powder,and egg white sugar mixture. Beat until combined.

Add the Strawberry Jello,and mix in well.
Coat the strawberries with 2 tablespoons of flour. Add the chopped strawberries and combine until incorporated.

Bake in oven at 350 degree's for about 45 minutes,or until pick comes out clean. Cool cut in to squares,and serve with sifted powdered sugar, or fresh strawberries with cool whip free topping.
