- self rising flour
- 1/2 c
- salted butter
- 1/3 c
- caster sugar

- currants,roughly chopped

- ground nutmeg

- splash of milk
1Combine flour and butter until fine crumbs form. Stir in the , currants, sugar and nutmeg.
Add egg and knead until mixture comes together as a soft dough- add a "little" splash of milk if it looks to dry and falling apart.
2Turn dough onto a floured surface, roll to a little over 1/4 of an inch thick and cut out into circles or other pattern.
3Put a skillet on over medium heat. Add a little butter, reduce heat to medium low.
Put 4-5 cakes in the pan at a time.
Cook a few minutes on each side. Make sure the pan stays hot enough to fry cakes but not to hot to burn them- just brown so done in the middle.
Place in sugar and flip over to coat both sides.
Serve with a spot of tea!
