Ingredients

SWEET POTATO SPICE BARS

2 c
original bisquick mix
1 c
dark brown sugar
1 c
natural unsweetened applesauce
1 tsp
vanilla extract
2 tsp
cinnamon, ground
1 tsp
nutmeg, ground
1/2 tsp
ginger powder
3
eggs
2 c
sweet potato cooked and mashed
1/2 c
raisins

CINNAMON CREAM CHEESE FROSTING

2 oz
cream cheese, low-fat
2 Tbsp
butter, softened
1 tsp
vanilla, extract
2+ Tbsp
fat free evaporated milk
2 c
powdered sugar
1 tsp
cinnamon, ground

Step-By-Step

1Heat oven to 350°F. Grease bottom and sides of 15"x10"x1" pan with shortening or cooking spray.

2In large bowl, beat all bar ingredients except raisins with electric mixer on low speed for 30 seconds, scraping bowl frequently. Beat on medium speed for about 2 minutes, scraping bowl occasionally. Stir in raisins. Pour and spread into prepared pan.

3Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 2 hours.

4In medium bowl, beat cream cheese, softened butter, vanilla, cinnamon and 2 tablespoons milk with electric mixer until smooth. Gradually mix in powdered sugar on low speed till smooth. If to thick add more milk 1 teaspoon at a time to desired spreadable consistency. Spread over bars. Cut into 8 rows by 4 rows for 32 bars. Store covered in refrigerator. Enjoy!
