Serves:
3 dozen

Ingredients

1/2 c
butter, room temperature
4 oz
cream cheese, room temperature
3/4 c
granulated sugar
3/4 c
brown sugar, lightly packed
1/4 c
orange liqueur
1 large
egg
1/2 tsp
salt
1/2 tsp
baking soda
1/2 tsp
baking powder
3/4 tsp
ground ginger
1/2 tsp
cinnamon, ground
2 1/2 c
all-purpose flour
15 oz
can of mandarin oranges, chopped and well drained
1 c
walnut pieces

Step-By-Step

1Drain the Mandarin oranges. Chop them and drain again.

2Pre-heat oven to 350 degrees.
Cream together the butter, cream cheese, both sugars, the orange liqueur, and the egg in a large mixing bowl.

3In a separate bowl, sift together the salt, baking soda, baking powder, and flour. To this dry mix, add the Ginger and Cinnamon.

4Gradually blend the dry mixture into the creamed mixture. Fold in the Mandarin oranges and the walnut pieces.

5Drop by teaspoons onto parchment lined cookie sheets. Do not crowd them. Bake in a pre-heated 350 degree oven for 15 to 18 minutes. Remove cookies to rack for cooling.
