Sneaky Cookie Bars

These cookie bars will satisfy even the pickiest eater who doesn't like vegetables- no need to tell them they are made with green beans.

Great made with other cooked veggies too!
Try with cooked beets- makes red bars for Valentines Day.

Ingredients

1 1/4 c
whole wheat flour
1/3 c
non fat dry milk powder
1/2 c
honey
1 tsp
baking soda
1 tsp
cinnamon
1/2 tsp
each nutmeg, cloves and salt
1 large
egg
1/2 c
each vegetable oil and applesauce
2 c
cooked green or yellow wax beans (16 oz. can of either one))
3/4 c
chopped walnuts
1/2 c
currants, or raisins or cranberries
2 Tbsp
powdered sugar

Directions Step-By-Step

Sift together the first 8 ingredients in mixing bowl until blended.
Place egg, oil, applesauce and beans in blender; blend until smooth.
Pour over dry ingredients; mix well.
Stir in nuts and raisins.
Pour into greased 8x12 inch pan.
Bake at 350^ for 25 to 30 minutes. Sprinkle with powdered sugar when slightly warm. Cut into bars.

Note:
If desired make a thin powdered sugar and lemon icing and drizzle over top. (I use this method).
