No Carb Peanut Butter Cookies

Since I have been on South Beach I have craved a little sweet at night and these fit the bill very nicely and fit in with my plan. The crumble VERY easily so let them cool a bit before taking off the cookie sheet.

Ingredients

1 c
natural peanut butter (or your choice)
1 large
egg
1/2 c
splenda
dash
vanilla (optional)

Step-By-Step

1Preheat oven to 350.
2Mix all the ingredients together. You can add or decrease the Splenda to your own taste.
3Break off about 12 pieces and roll into a ball the place on a cookie sheet sprayed with Pam. Press down with a fork in the familiar fork patern.
4Bake for about 10 minutes or until they have stiffened up. Its kind of hard to tell but they will be firm to the touch. Cool then take off the cookie sheet and enjoy. Not your normal cookies but it fills a void. :-D
