LEMON CHEWY COOKIES

This is one of my "throw-together" recipes. :-)

The little bit of buttermilk brings out the lemon flavor even more. They taste better than they look in this picture. I'm having problems with my camera.

Ingredients

1 c
butter, softened but not melted
2 c
sugar
2 medium
eggs
1 Tbsp
lemon extract
1 Tbsp
lemon juice
1/8 c
buttermilk
2 c
unsifted all purpose flour
1 tsp
baking soda
1/2 tsp
salt
powdered sugar for rolling cookies

Step-By-Step

1By hand, cream butter and sugar in large mixing bowl.
Add eggs, lemon extract, lemon juice,and buttermilk; blend well.
2In a separate bowl, combine flour, baking soda, and salt; blend into creamed mixture. Don't over-stir.
3Roll into walnut-sized balls and then roll in the powdered sugar.
Place on a parchment lined cookie sheet.
4Bake at 350 degrees for 10 to 12 minutes. Do not over-bake.
Remove from oven and cool on wire rack.
