gram's no-bake fudge "cookies"

This recipe goes way back to my childhood. My mother used to make these delicious no-bake "cookies" quite often. They're so easy to make and so delicious! They taste so much like the fudge my mother used to make....you know....the kind you have to beat forever to get the fudge to cool and lose it's gloss before spreading it in the pan? But these require only a fraction of the time. You can make them "your own" by adding your favorite ingredients, like raisins, toasted nuts, coconut, M&M's ..... I'd like to try malted milk powder next time I make them!

Ingredients For gram's no-bake fudge "cookies"

  • 1/2 c
    butter
  • 2 c
    granulated sugar
  • 1/2 c
    whole milk
  • 4 1/2 Tbsp
    baking cocoa
  • 1 pinch
    salt
  • 1/2 c
    creamy peanut butter
  • 1 tsp
    vanilla extract
  • 3 1/2 c
    old fashioned oats
  • mix-ins (coconut, chopped nuts, etc), optional

How To Make gram's no-bake fudge "cookies"

    Place a 2-3 quart saucepan over medium/high heat. Add the butter, sugar, milk, cocoa and salt. Bring to a boil, stirring constantly. Boil for 2 to 3 minutes, stirring constantly.

    Remove from the heat and add the peanut butter. Mix well to combine.

    Add the extract and oats. Mix well. At this point, add any "add-ins" that you want to use.

    Drop the mixture by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until set. Store in airtight containers.
