Gluten Free Vegan Oatmeal Raisin Cookies

This was my first recipe with coconut flour. I love the smell of it - like toasted coconut.

I use beet sugar in all my recipes due to an allergy. Cane sugar will work just as well.

Ingredients

1/8 c
coconut flour
5/8 c
king aruthur gluten-free multi-purpose flour
1/2 tsp
baking soda
1/2 Tbsp
salt
1/2 tsp
cinnamon
1 tsp
xanthum gum
1 Tbsp
flax seeds, ground into meal
3/4 c
beet sugar
1 Tbsp
dark karo syrup or molasses
2 Tbsp
maple syrup
1/4 c
coconut oil
1/4 c
unsweetened applesauce
1/2 tsp
vanilla
1 1/2 c
rolled oats
1/2 c
raisins
1/2 c
walnut pieces (optional)

Step-By-Step

1Mix flax seed meal into applesauce. Set aside.
2Put your raisins in a cup or bowl and pour hot water over them to plump them. Cover and set aside.
3Mix flours, baking soda, salt, cinnamon, and xanthan gum together in a medium bowl.
4In another medium bowl, mix sugars,syrups, applesauce and flax meal, oil, and vanilla.
5Mix flour mixture into your sugar mixture and stir until blended.
6Stir in oats. When the oats are mixed well, add raisins and walnuts.

Preheat oven to 350 degrees while you let mixture sit for 10 minutes.
7Drop your cookies onto a greased cookie sheet. The cookies will not spread so you can put them close to each other.

Bake for 12 to 14 minutes.

Let cool for 5-8 minutes on the sheet, then transfer to a wire rack to finish cooling.
