Ingredients

1 c white sorghum flour
1 c white rice flour
1/2 c almond flour
1/2 c potato starch flour
1 tsp cream of tartar
1 tsp baking soda
1 tsp gluten free baking powder
1 tsp xanthan gum
1/2 tsp salt
1 c granulated sugar
1/2 c ghee (measured melted) or coconut oil
1 tsp pure vanilla
1/2 tsp lemon oil
2 eggs
2 Tbsp coarse sugar

Directions

In small bowl, mix flours, the cream of tartar, baking soda, baking powder, xanthan gum and salt; set aside.

In medium bowl, beat remaining ingredients except coarse sugar with electric mixer on low speed 1 minute or until well blended. Shape dough into a ball. Wrap in plastic wrap; refrigerate at least 2 hours.

Heat oven to 350 degrees F. Spray cookie sheet and rolling pin with cooking spray (without flour). On nonstick baking mat o cooking parchment paper sprayed with cooking spray (without flour), roll dough to 1/4-inch thickness. Using 3- to 3 1/2 inch cookie cutter, cut shapes from dough; place 1 to 1 1/2 inches apart on cookie sheet. Sprinkle with coarse sugar.

Bake 10 to 15 minutes or until set and edges are lightly browned. Immediately remove from cookie sheet to cooling rack.

These are from BettyCrocker, but the recipe wouldn't download for this recipe. It kept on going to a different sugar cookie recipe. I got em' both. Trying to help out our GF diet members a little bit. We got a couple of new members recently that are new to GF and are having a bit of difficulty in adjusting their recipes. I figured "new" would do!! LOL!!
