1 c peanut butter, creamy
1 c sugar
1 large egg
1/2 c chocolate chips
3 slice bacon, cooked
1 tsp vanilla extract

Yes you read that right BACON in a cookie. Until a month ago would've thought you crazy had you mentioned adding bacon to a cookie. Being gluten intolerant had to find a twist to the recipes out there for this same cookie. This one is simple to do and quite tasty.

Personalize This


Preheat oven 350. Line cookie sheet with parchment paper. Crumble cooked bacon put aside.
Combine all ingredients including the crumbled bacon.
Drop a teaspoonful of dough spaced 2 inches apart on prepared cookie sheet. Press down with fork lightly.
Bake for 8-10 minutes at 350. Cookies are done when they begin to brown around edges.
Remove from cookie sheet to cool.

I have seen a few recipes very similiar to this one on low carb sites...one used almond or coconut flour and stevia or splenda and the other called for no flour as yours but used splenda instead of sugar and both called for low carb chocolate chips or chopped 85% dark chocolate bar by Lindt(it is very low carb). Not sure I could do bacon and bacon grease in a cookie but it sounds interesting. thanks for sharing

No problem Chris and thanks for the comment. The recipe was not meant to be a low carb just a way for gluten free individuals to be able to experience the richness of this cookie as the flour version out there. All who tasted this version and another version that was made using flour, baking powder and a few other ingredients, agreed the taste was intensely enjoyable and they didn't miss the flour.
