Cranberry Mazurkas

These bar cookies have been handed down from my husband's Grandmother who brought them over from Poland. They are simple to make and a great hit at Christmas time!

2 1/2 c
dried cranberries
2 c
orange juice, fresh
2 Tbsp
brown sugar, firmly packed
1 tsp
orange zest
1 c
all purpose flour
1 c
quick cooking oats
1/2 c
brown sugar, firmly packed
1/2 c
butter, cold, cut into pieces

Directions Step-By-Step

Preheat oven 350 degrees. Spray a 13 x 9" pan,set aside.
Combine first 4 ingredients in saucepan,simmer over medium heat 13 min. or until liquid absorbed & mixture is thick. Spoon into blender & process till smooth. Set aside to cook.
Combine flour, oats & 1/2 cup of brown sugar; cut in butter with pastry blender to resemble coarse meal. Reserve 1 cup mixture, setting aside. Press remaining flour mixture into pan. Spread cranberry mixture over top, sprinkle reserved flour mixture over cranberries.
Bake 45 minutes till slightly browned on top. Cool in pan. Before cutting into bars, sprinkle powdered sugar over top.
