Chocolate No Bake Cookies

This recipe has been around for a long time but it is still one of my favorites!

Stove Top


2 c
(1/2 c.) stick
butter, cubed
1/2 c
half and half
1/4 c
unsweetened cocoa
1/2 c
creamy peanut butter
1/2 Tbsp
imitation vanilla
2 1/2 c
quick cooking oats
1/2 c
1/2 c
pecans or walnuts, coarsely chopped

Directions Step-By-Step

Combine sugar, butter, half and half, and cocoa in heavy saucepan. Cook over medium-high heat. Stir and bring to a boil. Boil for 2 minutes. Remove pan from heat. Add peanut butter, stirring until melted. Stir in vanilla, oats, coconut, and nuts. Use a cookie scoop and drop cookies onto waxed paper or parchment paper. Cool until firm. Makes 2 1/2 dozen.

Note: Sometimes I freeze these cookies in ziploc bags especially if I make them around Christmas.
