Notes from the Test Kitchen:
Soft, yummy sugar cookies with just a *hint* of rum flavor... Pass the platter, please!

Ingredients

2 3/4 c
flour
1 1/4 tsp
baking soda
1/4 tsp
baking powder
1/2 tsp
salt
1 c
butter, softened
1 1/2 c
white sugar
1
egg
1 1/2 tsp
rum extract
colored sugar to top

Directions Step-By-Step

Preheat oven to 350 degrees. Line cookie sheets with parchment paper.

In a small bowl, mix all dry ingredients, except sugar. Set aside.

Using a mixer, beat together the butter and sugar until smooth and very fluffy.

Beat in egg and rum extract.

Gradually blend in the rest of the dry ingredients. Make sure your mixing thoroughly.

Roll rounded teaspoonfuls of dough into balls, and roll in colored sugar. Place on lined cookie sheets about 1 1/2 inches apart.

Bake 8 to 10 minutes in the preheated oven, or until lightly browned.

I made these cookies yesterday and wanted to have them done when my grandson came home from school. He smelled them cooking and came right over and ate 3 in no time. He loved them and my husband said "oh my God are these delicious". The is for a great recipe. I was going to make them for Christmas but didn't get to do it. Next year I'll start earlier. Yummy!!!! Just to let you know my grandson is 10!!!

I used vanilla extract in place of rum extract, but otherwise I followed this recipe precisely. My cookies came out VERY crispy—like typical sugar cookies. I don't like crunchy/crispy cookies, so this result was something of a disappointment to me. (No worries, the man of the house loves them and will munch them up faster than Cookie Monster.) Does anybody have any ideas about why my cookies didn't come out chewy? I would appreciate any advice or suggestions! Thank you!

Can one use real rum in place of the rum extract?
