Andes Mint Cookies
Prep time does not include the hour of chilling.

- 3/4 c
- 1 1/2 c
- brown sugar
- 2 Tbsp
- 12 oz
- chocolate chips - i use semi sweet
- 2 3/4 c
- 1/2 tsp
- 1 1/4 tsp
- baking soda
- andes mints
2Roll the dough into 1 1/2 inch balls and place on a lightly greased cookie sheet, leaving ample space between the dough balls.
Bake at 350 degree F. for 8 to 9 minutes.
Remove the cookies from the oven, and on top of each cookie, place half of an Andes mint. ( I use a whole one.)
Note: I make sure all my candies are unwrapped, so as to get them on the cookies as soon as out of oven.
Allow the mint to melt and then swirl the mint over the cookie with the back of a spoon or a knife.
